Tangy and Delicious: No Mayo Fly by South™ Chicken Salad

2 large skinless, boneless, chicken breasts (to yield 2 ½ cups shredded)
¼ cup Fly by South™ White BBQ Sauce for mixing
1 cup Fly by South™ White BBQ Sauce for marinating
½ cup Fly by South™ White Dipping Sauce
2 tablespoons minced onion
3 tablespoons chopped celery
½ tablespoon minced garlic
Coarse ground black pepper
Seasoned salt

Combine ¼ cup Fly by South™ White BBQ Sauce with ½ cup Fly by South™ White Dipping Sauce, set aside. Marinate chicken breasts with 1 cup Fly by South™ White BBQ Sauce for 30 minutes (up to 2 hours). Preheat oven to 350° F. Bake in uncovered baking dish until chicken reaches an internal temperature of 165° F (usually about 30 minutes). Remove and let cool. Shred chicken. Fly By South™ Ghost

I’ll start by saying, “I like ketchup.” In fact, there is a squeeze bottle of ketchup in my refrigerator at this very moment and it remains the stand-by condiment of most American households. However, one of the reasons I developed the Fly by South™ dipping sauces was to provide a healthy alternative that tastes great without the sugar, sodium, and carbs that you find in your average ketchup. While ketchup has several good qualities, let’s take a look at the nutrition facts of both Fly by South™ White Dipping Sauce and ketchup (catsup), as found on the USDA Nutrient Data Laboratory and compare (make sure you change the serving size to 2.0 tbsp. and “Apply Changes” to get an accurate comparison). These values are for the average ketchup and not any specific brand (I don’t want to start a war here).

Sugar:

Ketchup contains over seven grams of sugars in one serving, a little more than two (2) of your average sugar cookies.  Fly by South™ dipping sauces contain zero grams of sugars per serving.  The hint of sweet comes from a touch of cream and natural stevia.

Sodium:

Ketchup contains 308 mg of sodium per serving while the Fly by South™ dipping sauces contain 200 mg of natural sea salt in the same serving size.  It’s interesting to note that the FDA considers a product “low sodium” if it contains 140 mg, or less, per serving.

Carbohydrates:

Ketchup contains just under nine grams of carbs per serving.   Fly by South™ dipping sauces contain just one gram, perfect for a low carb diet!

Fats and Calories:

Ketchup contains very little in the way of fats, both unsaturated and saturated, less than a gram, in fact.  Fly by South™ sauces contain eight grams of fat, 6.5 g of which is monounsaturated Omega 3 fatty acids (the good stuff) found in the Virgin Olive Oil.  So while the ketchup wins in the lower fat category, Fly by South™ sauces give you the health benefits of Olive Oil.  The Olive Oil in Fly by South™ sauces also accounts for the majority of the eighty calories per serving.

Gluten and Soy:

Fly by South™ sauces are all-natural, gluten-free, and soy-free.  Ketchup, on the other hand, can vary from brand to brand.   Most ketchup found in the US is free of gluten but many do contain soy.  Always check the label!

Fly by South™ Healthy Meat Balls

1 ½ pounds ground turkey (may substitute chicken or pork)
2 tablespoon quick cooking oats (see gluten free information below)
1 tablespoon flax seed meal
2 tablespoons bread crumbs (see gluten free substitution below)
4 beaten egg whites

Fly by South™ Sautéed Shrimp

Marinate peeled shrimp with Fly by South™ White BBQ Sauce for 30 minutes (no more than 2 hours). Saute shrimp over medium heat for 3-4 minutes or until shrimp is a pink and pearly color.

Fly by South™ Panfry Pork Chop

Marinate pork chops with Fly by South™ White BBQ Sauce for 2 hours (no more than 8 hours). Coat large skillet with Fly by South™ White BBQ Sauce then panfry over medium heat. Place pork chops in skillet and cook approximately 8 minutes per side, 16 minutes total or until meat reaches an internal temperature of 145°F then let rest for 3 minutes.

Serve with Fly by South™ White Dipping Sauce or Spicy Ghost Dipping Sauce.

2 large thinly sliced cucumbers
4 tablespoons sliced red onion

1 fresh salmon fillet (about 1 lb) or 1 large can
2 tablespoons diced celery
1 tablespoon diced onion
2 tablespoons egg whites, beaten (or 1 egg with yolk)

3 tablespoons bread crumbs (gluten free substitution available, see below)

White sauce…really?

Fly by South™ Gourmet Chicken Salad (No Mayo)

2 large free range, skinless, boneless, chicken breasts (to yield 2 ½ cups shredded)
1 cup Fly by South™ White BBQ Sauce (for marinating)
¼ cup Fly by South™ White BBQ Sauce (for mixing)
½ cup Fly by South™ White Dipping Sauce
2 tablespoons minced shallots (fresh)
3 tablespoons chopped celery (fresh)
½ tablespoon minced garlic (fresh)
Coarse ground black pepper (fresh)
Seasoned salt

Combine ¼ cup Fly by South™ White BBQ Sauce with ½ cup  Fly by South™ White Dipping Sauce, set aside. Cut chicken breasts into large pieces then marinate with 1 cup Fly by South™ White BBQ Sauce for 30 minutes (up to 2 hours). Coat large skillet with Fly by South™ White BBQ Sauce then add chicken. Panfry over medium heat, stirring frequently. When chicken is almost browned, add minced garlic. Continue stirring until garlic turns slightly brown then remove from heat. Let cool. Shred chicken. In medium mixing bowl, add shredded chicken and remaining ingredients. Mix thoroughly. 3 pounds honey gold, white round potatoes, russet potatoes, red-skinned potatoes, new potatoes, or fingerling potatoes
1 cup Fly by South™ White BBQ Sauce
2 tablespoons melted butter
1 tablespoon prepared horseradish

Heat oven to 400° F (375° F for convection oven). Wash potatoes. Dystgalecatu . Slice potatoes into bite sized pieces.
