Fly by South™ Gourmet Chicken Salad (No Mayo)

2 large free range, skinless, boneless, chicken breasts (to yield 2 ½ cups shredded)
1 cup Fly by South™ White BBQ Sauce (for marinating)
¼ cup Fly by South™ White BBQ Sauce (for mixing)
½ cup Fly by South™ White Dipping Sauce
2 tablespoons minced shallots (fresh)
3 tablespoons chopped celery (fresh)
½ tablespoon minced garlic (fresh)
Coarse ground black pepper (fresh)
Seasoned salt

Combine ¼ cup Fly by South™ White BBQ Sauce with ½ cup  Fly by South™ White Dipping Sauce, set aside. Cut chicken breasts into large pieces then marinate with 1 cup Fly by South™ White BBQ Sauce for 30 minutes (up to 2 hours). Coat large skillet with Fly by South™ White BBQ Sauce then add chicken. Panfry over medium heat, stirring frequently. When chicken is almost browned, add minced garlic. Continue stirring until garlic turns slightly brown then remove from heat. Let cool. Shred chicken. In medium mixing bowl, add shredded chicken and remaining ingredients. Mix thoroughly. To spice up your chicken salad, substitute Fly by South™ Spicy Ghost Dipping Sauce for White Dipping Sauce or combine to taste!

For the mayonnaise lovers, simply reduce the Fly by South™ White Dipping Sauce to ¼ cup and add 2 tablespoons of your favorite mayonnaise.
